Wild Rice and Greens

INGREDIENTS

  • 1 cup wild rice
  • 5 ounces greens( arugula, spinach, mixture)
  • 1 -15 oz can of favorite beans, rinsed and drained
  • 2 stalks of celery, chopped
  • 1 carrot, shredded
  • ½ cup toasted, nuts or seeds of choice

DRESSING

  • 3 TBS balsamic dressing
  • 1 TBS maple syrup
  • 1 tsp  Dijon mustard
  • Salt and pepper

INSTRUCTIONS

  1. Cook the rice in 4 cups of water over a medium heat.
  2. Simmer covered for about 35 minutes, till tender.
  3. Place rice in the strainer and cool with water.
  4. Make the dressing
  5. Assemble the salad
  6. Add the dressing. Toss together
