Wild Rice and Greens

INGREDIENTS
- 1 cup wild rice
- 5 ounces greens( arugula, spinach, mixture)
- 1 -15 oz can of favorite beans, rinsed and drained
- 2 stalks of celery, chopped
- 1 carrot, shredded
- ½ cup toasted, nuts or seeds of choice
DRESSING
- 3 TBS balsamic dressing
- 1 TBS maple syrup
- 1 tsp Dijon mustard
- Salt and pepper
INSTRUCTIONS
- Cook the rice in 4 cups of water over a medium heat.
- Simmer covered for about 35 minutes, till tender.
- Place rice in the strainer and cool with water.
- Make the dressing
- Assemble the salad
- Add the dressing. Toss together
