Mashed Chickpea & Avocado Sandwich

INGREDIENTS
- 1 can (15oz.), drained and rinsed
- 1 avocado, seed removed
- 1 small carrot, diced
- Juice of 1 lemon
- ¼ cup of hummus, optional
- Sea salt & fresh pepper, to taste
- Handful of sunflower seeds
INSTRUCTIONS
- In a medium-size bowl, add chickpeas and roughly mash with the back of a strong fork.
- Add avocado and mash together well.
- Add carrots, lemon juice, hummus, salt, and pepper, mix to combine.
Take your favorite bread. Add some greens, sprouts and spread the mash. Delicious!
Tip: I always keep a fresh hummus in the fridge. Also good for snacking
