Lemon Bars

INGREDIENTS

  • 2/3 cup coconut flour
  • 1/4 tsp salt
  • Stevia/Monk fruit to taste
  • 1/3 cup coconut oil

INSTRUCTIONS

  1. Heat the oven to 350 degrees.
  2. Using the above ingredients mix in a bowl with a fork to make a crust similar to a regular pie crust.
  3. Then pat into an 8×8 pan or smaller. Bake for about 10 minutes until slightly golden brown.
  4. Let cool.

SAUCE

  • 1/4 coconut oil
  • Juice of 3 lemons
  • Stevia/Monk fruit to taste
  • 1 can coconut cream (the cream part is important)
  • 1 tbsp arrowroot starch 1 tsp vanilla
  1. In a saucepan add the coconut oil, Stevia/Monk fruit, coconut cream, lemon, vanilla and whisk over very low heat.
  2. Then add arrowroot starch.
  3. Take off of the heat and keep whisking so that it doesn’t coagulate. You want it to be slightly thick like pudding. You need to make sure it’s smooth.
  4. Pour over the crust.
  5. Place in the refrigerator until it sets. Top with berries.
