Lemon Bars

INGREDIENTS
- 2/3 cup coconut flour
- 1/4 tsp salt
- Stevia/Monk fruit to taste
- 1/3 cup coconut oil
INSTRUCTIONS
- Heat the oven to 350 degrees.
- Using the above ingredients mix in a bowl with a fork to make a crust similar to a regular pie crust.
- Then pat into an 8×8 pan or smaller. Bake for about 10 minutes until slightly golden brown.
- Let cool.
SAUCE
- 1/4 coconut oil
- Juice of 3 lemons
- Stevia/Monk fruit to taste
- 1 can coconut cream (the cream part is important)
- 1 tbsp arrowroot starch 1 tsp vanilla
- In a saucepan add the coconut oil, Stevia/Monk fruit, coconut cream, lemon, vanilla and whisk over very low heat.
- Then add arrowroot starch.
- Take off of the heat and keep whisking so that it doesn’t coagulate. You want it to be slightly thick like pudding. You need to make sure it’s smooth.
- Pour over the crust.
- Place in the refrigerator until it sets. Top with berries.
