Hearty Roasted Curry Root Vegetables

INGREDIENTS

  • Select any root vegetables preferably sweet potatoes, yams, butternut squash.
  • Olive Oil

INSTRUCTIONS

  1. Select any root vegetables preferably sweet potatoes, yams, butternut squash.
  2. Peel all vegetables and cut into cubes.
  3. Put all cut vegetables in a large bowl and toss and cover with about 1/2 cup olive oil
  4. Next, add 1-2 teaspoons each of the following spices-cumin, coriander, turmeric, salt, pepper-onto the vegetables and coat all of the vegetables with spice.
  5. Roast in a pre-heated oven at 375 degrees until the vegetables are tender and slightly browned.
