Easy Lentil Soup

This is SO easy and delicious!
INGREDIENTS
- I MIREPOIX from Trader Joe (container of diced carrots, celery, and onion)
- 3 quarts of vegetable broth
- 1 ½ cups red lentils
- Pinch of thyme
- 1 tsp cumin
- Dash of salt and pepper to taste
INSTRUCTIONS
- Saute the mirepoix in a little of the broth for a few minutes
- Rinse the lentils and add to the pot with the remaining broth
- Add the seasonings
- Cover and simmer about 30 minutes
This is even better on the second day.
Tip: Throw in a handful a spinach while the soup is done cooking.
