Chickpea Omelette

INGREDIENTS
- 1 cup chickpea flour
- ¾-1 cup favorite plant milk
- 2-3 TBS nutritional yeast
- ½ tsp baking powder
- ¼ tsp tumeric
- Salt and pepper to taste
- Cut up veggies of your choice. Use up what is left in your veggie drawer.
INSTRUCTIONS
- Mix the batter
- Put the desired veggies in a prepared pan. Cook for a few minutes
- Pour the batter on top and cover. Cook for a few minutes
- Flip the omelet
- You can sprinkle with shredded Daiya cheese or other plant based cheese.
