Creamy Carrot Quinoa Bowl

INGREDIENTS
- 2 medium-sized carrots
- 1/2 cup quinoa flakes or cooked quinoa
- 10 ounces almond milk (ideally homemade- blend 12 almonds in 10 ounces of water on high)
- 1/4 cup of berries
- 1/2 banana Or Stevia/Monk fruit to taste (1/4 to 1/2 teaspoon)
- 1 scoop protein powder (Bluebonnet vanilla was my go-to)
- 1 scoop organic vegetable broth powder or collagen powder or a teaspoon of gelatin powder of choice (Great Lakes is what I ate)
- Optional
- 2 Tablespoon soaked Gond Katira
- 1/4 teaspoon of cardamom powder or cinnamon powder for flavor and nutrition
- 5 strands of soaked saffron
INSTRUCTIONS
- Cook carrots and quinoa together till carrots are very soft
- Blend in a high-speed blender all the ingredients including cooked carrots and quinoa
- Pour the creamy deliciously pink pudding into a bowl and enjoy with fresh berries as a topping.
