Creamy Carrot Quinoa Bowl

INGREDIENTS

  • 2 medium-sized carrots
  • 1/2 cup quinoa flakes or cooked quinoa
  • 10 ounces almond milk (ideally homemade- blend 12 almonds in 10 ounces of water on high)
  • 1/4 cup of berries
  • 1/2 banana Or Stevia/Monk fruit to taste (1/4 to 1/2 teaspoon)
  • 1 scoop protein powder (Bluebonnet vanilla was my go-to)
  • 1 scoop organic vegetable broth powder or collagen powder or a teaspoon of gelatin powder of choice (Great Lakes is what I ate)
  • Optional
    • 2 Tablespoon soaked Gond Katira
    • 1/4 teaspoon of cardamom powder or cinnamon powder for flavor and nutrition
    • 5 strands of soaked saffron

INSTRUCTIONS

  1. Cook carrots and quinoa together till carrots are very soft
  2. Blend in a high-speed blender all the ingredients including cooked carrots and quinoa
  3. Pour the creamy deliciously pink pudding into a bowl and enjoy with fresh berries as a topping.
