Coconut Keto Snowballs

Yield: 7-10 snowballs
INGREDIENTS
- 2 cups shredded coconut
- 1/4 cup full fat coconut milk
- 2 tablespoons organic stevia or monk fruit
- Pinch of pink salt
- 1/8 teaspoon vanilla extract
- 20 drops of Peppermint essential oil, (optional)
Servings: About 7-10 snowballs
INSTRUCTIONS
- In a high-speed blender or food processor, add coconut and blend until a powder texture
- Add sweetener and coconut milk and vanilla and blend until a thick batter forms
- Add a little extra coconut milk if the batter is too crumbly
- Slightly wet your hands and form the batter into small balls and place on a lined plate
- Sprinkle with extra sweetener or cinnamon and refrigerate until they firm up
