Coconut Keto Snowballs

Yield: 7-10 snowballs

INGREDIENTS

  • 2 cups shredded coconut
  • 1/4 cup full fat coconut milk
  • 2 tablespoons organic stevia or monk fruit
  • Pinch of pink salt
  • 1/8 teaspoon vanilla extract
  • 20 drops of Peppermint essential oil, (optional)

Servings: About 7-10 snowballs

INSTRUCTIONS

  1. In a high-speed blender or food processor, add coconut and blend until a powder texture
  2. Add sweetener and coconut milk and vanilla and blend until a thick batter forms
  3. Add a little extra coconut milk if the batter is too crumbly
  4. Slightly wet your hands and form the batter into small balls and place on a lined plate
  5. Sprinkle with extra sweetener or cinnamon and refrigerate until they firm up
