Basil Minced Chicken

INGREDIENTS
- 1 tablespoon coconut oil or Avocado Oil
- 1 tablespoon toasted sesame oil
- 5 cloves garlic, minced
- ½-inch piece ginger, peeled and grated
- 1 pound organic chicken minced
- Pinch of turmeric and black pepper
- Blended greens 1 cup (chard/arugula/spinach/romaine/kale..or combination)
- 2 tablespoons apple cider vinegar
- 2 tablespoon coconut aminos
- 1/2 tablespoon fish sauce
- Himalayan sea salt to taste
- 1/2 avocado diced for topping
- 1/2 – 1 cup Thai basil, finely chopped
- 1/4 cup Mint and cilantro finely chopped
INSTRUCTIONS
- Heat the coconut oil in a large skillet over medium-high heat. Stir-fry the garlic and ginger for 1 minute. Then add turmeric and black pepper.
- Add the minced chicken and stir-fry 5 minutes.
- Add the cup of blended greens and continue to simmer till all the liquid has been soaked up by the chicken
- Add the remaining ingredients except for basil, mint, cilantro, and avocado, and simmer, stirring frequently, for a couple more minutes.
- Remove from stove, toss basil, cilantro, mint and stir well to blend the herbs completely with the chicken. Cover and keep for 5 minutes so the basil aroma seeps into the chicken.
- Serve with diced avocado, enjoy!
