Basil Minced Chicken

INGREDIENTS

  • 1 tablespoon coconut oil or Avocado Oil
  • 1 tablespoon toasted sesame oil
  • 5 cloves garlic, minced
  • ½-inch piece ginger, peeled and grated
  • 1 pound organic chicken minced
  • Pinch of turmeric and black pepper
  • Blended greens 1 cup (chard/arugula/spinach/romaine/kale..or combination)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoon coconut aminos
  • 1/2 tablespoon fish sauce
  • Himalayan sea salt to taste
  • 1/2 avocado diced for topping
  • 1/2 – 1 cup Thai basil, finely chopped
  • 1/4 cup Mint and cilantro finely chopped

INSTRUCTIONS

  1. Heat the coconut oil in a large skillet over medium-high heat. Stir-fry the garlic and ginger for 1 minute. Then add turmeric and black pepper.
  2. Add the minced chicken and stir-fry 5 minutes.
  3. Add the cup of blended greens and continue to simmer till all the liquid has been soaked up by the chicken
  4. Add the remaining ingredients except for basil, mint, cilantro, and avocado, and simmer, stirring frequently, for a couple more minutes.
  5. Remove from stove, toss basil, cilantro, mint and stir well to blend the herbs completely with the chicken. Cover and keep for 5 minutes so the basil aroma seeps into the chicken.
  6. Serve with diced avocado, enjoy!
